This American chicken and dumplings is a comforting one-pot dish: a creamy chicken ragout with soft, steamed dumplings on top.
Chicken ragout
1. Cut the chicken breast fillet into cubes, and chop the carrot, the celeriac and the onion.
2. Fry the vegetables and the meat in the butter, pour in the meat stock, and cook it tender.
3. Thicken the ragout with the wheat flour and season with salt and pepper.
Dumplings
4. Mix the wheat flour with the egg, the milk and the baking powder into a smooth, thick batter.
5. Drop it by the spoonful into the hot ragout, cover it, and cook it in the steam in 12-15 minutes.
Tip: Do not lift the lid while it cooks – the steam is what makes the dumplings rise nicely and turn out light.
