1. Wash the dried plums, apricots, pears and apples thoroughly in lukewarm water.
2. Put them in a pan with 1.5 litres of water, the sugar, cinnamon stick and cloves.
3. Bring to the boil, then simmer for 10-15 minutes until the fruit is soft but not falling apart.
4. Take off the heat, squeeze in the lemon juice, cover and leave to cool.
5. Chill for at least 6 hours (ideally overnight) so the liquid becomes thick, sweet and aromatic.
6. Serve cold in glasses with the fruit – the fruit is eaten with a spoon and the liquid drunk.
Tip: Hošaf (from the Persian-Turkish 'hoşaf') is the traditional drink of iftar in Ramadan and of Bajram in Bosnia: a gentle, refreshing sweet after the fast. If you like it sweeter, add a spoonful of honey at the end instead of sugar.
