1. Peel the unripe green plantains (oil your hands as the sap is sticky), cut into 3 cm pieces and put them in salted water so they don't discolour.
2. Cut the beef into 2 cm cubes and fry in the oil in a pan for 10 minutes.
3. Add the diced onion, crushed garlic and diced bell pepper, fry for 5 minutes, then add the diced tomatoes, turmeric, salt and pepper.
4. Pour in the stock, cover and simmer over low heat for 30 minutes until the beef is almost tender.
5. Add the drained plantains, cover and cook for another 20 minutes until the plantains are soft and have absorbed some of the sauce; mash a few pieces with a wooden spoon to thicken it.
6. Serve hot, sprinkled with fresh coriander.
Tip: Matoke is Uganda's national dish: green plantains are the country's main staple and appear on the table every day. Use unripe, firm, green-skinned plantains, as they are not sweet but potato-like. It is also popular without meat, with peanut sauce.
