1. Simmer the smoked pork in the stock with the bay leaf for about 40 minutes.
2. Meanwhile, peel the swede, potatoes and carrots and cut them into even cubes.
3. In another pot sweat the finely chopped onion in the butter, add the vegetable cubes and fry for a few minutes.
4. Remove the meat, pour the cooking liquid over the vegetables, season with marjoram and cook for about 30 minutes.
5. Dice the meat, return it to the stew and season with salt and pepper; lightly mash some of the vegetables.
6. Sprinkle with parsley and serve hot.
Tip: Swede has a mild, sweet and earthy flavour - if you can't find it, parsnip with a little pumpkin is a good substitute.
