1. Mix the honey, the mustard, the oil and the crushed garlic until smooth.
2. Salt and pepper the chicken breast fillet, then brush it with half of the marinade and marinate it for at least 20 minutes.
3. In a pan, over a medium heat, fry it golden for 4-5 minutes per side.
4. Brush on the remaining marinade at the end of cooking, and caramelise it briefly – taking care that the honey does not burn.
5. Rest it a little, then serve immediately.
