A hearty, paprika potato soup with sliced sausage – one bowl, and lunch is ready.
1. Chop the onion finely, and in the cooking oil sweat it glassy. Add the crushed garlic, then take it off the heat and stir in the paprika.
2. Add the diced potato and the bay leaf, and pour in the water.
3. Over a medium heat cook it half-tender, then add the sliced sausage.
4. Cook it a further 15 minutes, until the potato softens and the sausage gives its flavour to the soup.
5. Season it with salt and pepper, and serve it hot.
Tip: It is tastiest with smoked sausage – its smoky, paprika fat gives the soup a nice colour and a deep flavour.
