Holstein cutlet
1. Cut the pork loin (600 g) into slices, pound them lightly, then salt and pepper them.
2. Toss the slices thinly in flour (2 tablespoons).
3. In a little oil (2 tablespoons cooking oil) fry them golden on both sides, then lift them onto paper towel.
4. In a separate pan fry eggs sunny-side up (4), taking care that their yolks stay soft.
French fries
5. Peel the potatoes (1 kg), cut them into chips, and toss them with the cooking oil (2 tablespoons) and salt.
6. Fry them golden and crisp in hot oil or in the oven.
7. Place a fried egg on the meat slices, and serve them with the French fries.
Tip: Keep the egg yolks slightly runny – this is what makes the dish truly classic.
