1. Halve the passion fruit and scoop the seedy, jelly-like pulp into a blender with a teaspoon.
2. Add 300 ml of cold water and pulse briefly a few times – just enough to loosen the pulp from the seeds without crushing them (which would make it bitter).
3. Strain through a fine sieve into a jug, pressing the seeds well with a spoon.
4. Add the remaining 700 ml of cold water and the sugar and stir until the sugar dissolves.
5. Taste: add more sugar if too sharp, more water if too strong.
6. Serve immediately over ice.
Tip: In Colombia, Peru and Brazil passion fruit juice is the most common lunchtime drink – for a creamier version, swap half the water for milk and you have "jugo en leche".
