The flapjack (English oat bar) is a simple, filling snack: a stickily sweet bar baked from buttery, honeyed oats.
1. Melt the butter with the brown sugar and the honey in a pot over a low heat – do not boil it, just let it melt smoothly together.
2. Take it off the heat and stir in the oats and a pinch of salt.
3. Toss it thoroughly so every flake is evenly coated with the buttery, honeyed mixture.
4. Add the dried cranberries and stir them in.
5. Smooth it into a baking-paper-lined tray and press it down HARD with the back of a spoon – without this it falls apart when sliced.
6. Bake at 180 °C for 20-22 minutes, until the edge is golden. The middle stays a little soft – this is right, it firms up as it cools.
Tip: Cut it into bars while still WARM, but lift it from the tray only once completely cooled. The other way round never works – warm it crumbles, cold it can no longer be cut.
