1. Break the cauliflower into florets and pre-cook them in salted water for 5-6 minutes, until just firm to the bite.
2. Drain them and let them dry off completely – the coating would slide off wet florets.
3. Toss the florets in flour, dip them in beaten egg, then roll them in breadcrumbs.
4. Fry them golden in plenty of moderately hot oil.
5. Lift them out with a slotted spoon onto paper towel.
6. Let them rest briefly.
7. Serve fresh, with rice or with pickles.
