"Biscuits and gravy" is the legendary, filling breakfast of the American South: crumbly, buttery biscuits in a peppery, creamy sausage gravy. A hearty start to the weekend.
For the biscuits:
1. Mix the 300 g flour with the 3 teaspoons baking powder and the 1 teaspoon salt, then rub in the 100 g cold butter.
2. Add the 200 ml milk and bring it together quickly – the less you work it, the more crumbly it will be.
3. Roll it out to a finger's thickness, cut out rounds, and bake at 200 °C for 12-14 minutes.
For the sausage gravy:
4. Remove the 300 g sausage from its casing and fry it in a pan, broken into small pieces.
5. Sprinkle over the 3 tablespoons flour, stir it in, then gradually pour in the 400 ml milk and the 100 ml cream.
6. Cook it thick, pepper it generously (1 teaspoon), and spoon it over the warm, halved biscuits.
Tip: Plenty of freshly ground black pepper cannot be left out – it gives the gravy its characteristic character.
