1. Slice the spring onion very thinly and chop the garlic finely.
2. In a small bowl, mix the soy sauce, rice vinegar, water and sugar and stir until the sugar dissolves.
3. Add the gochugaru, spring onion and garlic.
4. Finally stir in the sesame oil and the sesame seeds, lightly crushing them between your fingers to release their aroma.
5. Leave for 5 minutes so the chilli and onion can infuse.
6. Serve in a small bowl with jeon, pajeon, mandu dumplings or tofu.
Tip: Yangnyeom-ganjang is the all-purpose dipping sauce of Korean cooking – it goes with almost every fritter and dumpling. Drizzled over steamed rice with a fried egg, it also makes a simple, quick supper.
