Paprika pork stew with fresh green peas, thickened with sour cream, with homemade dumplings.
1. Cut the pork leg into thin strips, and chop the onion and the garlic finely.
2. In the cooking oil fry the onion, then stir in the garlic and the paprika – the latter quickly, so it does not turn bitter.
3. Add the meat strips, salt and pepper it, sprinkle over the marjoram, and with a little water braise it tender.
4. Add the green peas, and cook it a further few minutes, until they soften.
5. Mix the sour cream smooth with the flour, and thicken the stew with it; boil it together, until it thickens creamy.
The dumplings
6. Mix the flour with the egg, the water and the salt into a thick mixture.
7. Drop it into boiling salted water, and cook it until the dumplings rise to the surface of the water; strain them.
8. Serve the pea stew with the dumplings.
