1. Peel, quarter and core the apples and cut them into large pieces.
2. Put the apples in a pan with the water, sugar, vanilla sugar, lemon juice and cinnamon stick.
3. Simmer covered over medium heat for 15-20 minutes, stirring occasionally, until the apples are completely soft and falling apart.
4. Remove the cinnamon stick and blend the apples smooth with a hand blender, or leave them chunkier with a potato masher.
5. Taste and adjust with a little more sugar or lemon juice if needed.
6. Serve cooled with potato pancakes, rice pudding, semolina pudding or roasts; poured hot into sterilised jars, it keeps for weeks.
Tip: Mix several apple varieties (sweet and tart) - that's what gives it a really rich flavour.
