1. Soak the dried wakame in cold water for 10 minutes until it swells several times over, then drain and squeeze out the water thoroughly.
2. If the wakame has any tough stem parts, cut them out and cut the leaves into bite-sized pieces.
3. Halve the cucumber lengthways and slice into thin diagonal half-moons.
4. For the dressing, whisk the rice vinegar, soy sauce, sesame oil and sugar until smooth.
5. Toss the wakame and cucumber with the dressing.
6. Sprinkle with toasted sesame seeds and serve cold.
Tip: Dried wakame can swell up to tenfold, so an amount that looks small at first is plenty. Add a pinch of chilli flakes or grated ginger for more kick.
