1. Knead the minced pork thoroughly with the grated onion, the breadcrumbs, the crumbled thyme, salt and pepper.
2. Cut the puff pastry into long strips.
3. Shape the meat mixture into a log, and lay it lengthways down the middle of the pastry strips.
4. Fold the pastry over the filling, seal the edge, then cut it into bite-sized pieces.
5. Brush the tops with beaten egg – this is what makes them bake nicely glossy.
6. In a preheated oven, at 200 °C, bake them golden brown and crisp in 20-25 minutes.
Tip: A few small cuts on top of the pastry help the steam escape, so the parcels do not split while baking.
