1. Peel the sweet potato, and cut it into even batons or cubes, so they cook through at the same time.
2. Rinse it in cold water, then dry it thoroughly on a tea towel – it can only roast crisp on a dry surface.
3. Toss it thoroughly with the oil, the salt and the paprika.
4. Spread it onto a tray in a single layer, so it does not steam, then start roasting it at a high heat.
5. Turn it once during roasting, so every side browns.
