1. Bring the water to the boil, pour it over the black tea and steep for 5 minutes until strong.
2. Strain the tea and stir in the sweetened condensed milk until fully dissolved.
3. Pour the milk tea into a jug and hold a second, empty jug below it.
4. Pour the tea from a height of about half a metre in a thin stream from one jug into the other and back, 5-6 times – this makes it frothy and silky.
5. If you're new to it, start low over the sink and gradually raise the jug.
6. Serve piping hot in glasses with a thick layer of froth on top.
Tip: Malaysia's national drink and the star of the mamak stalls – the "pulling" (tarik) cools, mixes and froths the tea at once. Also excellent over ice (teh tarik ais); at home a milk frother will give you the foam.
