1. Soak the raisins in cold water for 10 minutes, then drain.
2. In a jug, stir the date syrup and grape molasses with a little lukewarm water until dissolved.
3. Add the rest of the cold water and the rose water and stir well; sweeten with more syrup to taste.
4. Lightly toast the pine nuts in a dry frying pan, then let them cool.
5. Half-fill the glasses with crushed ice and pour over the drink.
6. Scatter pine nuts and raisins on top of each glass and serve with a spoon and a straw.
Tip: Jallab is a favourite drink of Lebanese and Syrian summers and of breaking the Ramadan fast; its name comes from the Persian gul-ab (rose water). The floating pine nuts and raisins aren't decoration but part of the experience; you fish them out with a spoon. If you have no grape molasses, you can make it with date syrup only.
