Description

Slambuc is one of the shepherd's dishes of the Great Plain: a toasted pasta-and-potato one-pot dish made in a cauldron, with a smoky bacon flavour.

1. Dice the bacon, then in a cauldron or pot fry it crisp.

2. In the remaining fat fry the finely chopped onion.

3. Add the pasta sheets, and fry them golden.

4. Take it off the heat, stir in the paprika, then pour in the water.

5. Add the diced potato, salt and pepper it.

6. Cook it over a low heat until the potato and the pasta soften completely, then turning it now and then, brown it a little.

7. Serve hot.

Tip: Made in a cauldron over an open fire it takes on the most authentic, smoky flavour.
