Hungarian potato soup is a hearty soup, red from paprika and fragrant with caraway – a bowl of it stands up on its own for lunch.
1. Sweat the finely chopped onion glassy in the oil, then add the crushed garlic.
2. Take it off the heat, stir in the paprika (so it does not turn bitter), then add the diced potato and the sliced carrot.
3. Pour in the water, add the caraway, and cook until the potato softens (about 20 minutes).
4. Salt and pepper it to taste.
5. Serve sprinkled with chopped fresh parsley.
Tip: Always stir the paprika into the soup off the heat – in hot fat it quickly burns and turns bitter.
