1. In a small pot melt the butter, and fry the wheat flour in it golden.
2. Pour in the brown ale, and stirring constantly cook it into a thick mixture.
3. Stir in the grated cheddar, the mustard and the Worcestershire sauce.
4. Salt and pepper it, and keep stirring, until the cheese melts completely and becomes a silky cream.
5. Toast the bread slices, then spread them thickly with the cheese cream.
6. Under the grill toast it golden brown, and serve it with a fresh salad.
Tip: Not "rabbit" but cheese – the name is of jokey origin. With mature cheddar it is the real thing.
