A hearty, colourful vegetable soup that comes together even from the root vegetables in the pantry.
1. Chop the onion finely, and sweat it glassy in the cooking oil.
2. Add the diced carrot, parsley root and celeriac, then toss it through briefly.
3. Pour in the water, put in the diced potato, and bring it to the boil.
4. Add the cauliflower florets and the green peas, then cook the vegetables tender.
5. Salt and pepper it, finally sprinkle it with plenty of chopped parsley, and serve it.
Tip: The vegetables look best cut into roughly even cubes all at once – this way each spoonful gets a mix of them.
