Shakshuka is a Middle Eastern egg dish: eggs poached in a rich, spiced tomato base.
1. In olive oil fry the finely chopped onion and the diced pepper glassy, then add the crushed garlic.
2. Add the tomato, the cumin, the smoked paprika and the chilli, salt it, and cook it slowly thick.
3. Make wells in the thickened base with a spoon.
4. Carefully crack the eggs into them.
5. Covered, over a low heat, cook it until the white sets but the yolk still stays runny.
6. Sprinkle it with fresh parsley, and serve it with fresh bread.
Tip: The egg is ideal when the white has set but the yolk is still runny – the covered, slow cooking is its secret.
