Mushroom rice with chicken breast, which stands up as a one-pot dish, is a filling yet feather-light everyday meal.
1. Cut the chicken breast fillet into smallish cubes, slice the button mushrooms, and chop the onion finely.
2. In the oil fry the onion glassy, then add the crushed garlic.
3. Add the chicken cubes, and fry them until they whiten and lightly catch some colour.
4. Add the mushrooms, and fry them until they release their liquid and it cooks off.
5. Stir in the rice, fry it together for a few seconds, then pour in the water and salt it.
6. Under a lid, on a low heat, cook it done in about 18 minutes, until the rice softens and soaks up the water.
7. Finally serve it fresh, sprinkled with chopped parsley.
Tip: Do not stir the rice much during cooking, so it stays fluffy – loosen it with a fork before serving.
