1. Cook the macaroni in plenty of salted water until slightly firm (al dente), then drain.
2. Fry the diced onion in hot oil, add the minced meat and cook until it turns pale.
3. Season the meat with salt and pepper, stir in the tomato purée, pour in the stock and simmer until thick.
4. Toss the cooked pasta with the meat sauce and smooth it into a buttered dish.
5. Mix the cream with the beaten egg and half of the grated cheese, pour over the pasta and sprinkle with the remaining cheese.
6. Bake in a 190 °C oven for about 25 minutes until golden and serve fresh.
Tip: Deliberately leave the pasta slightly firm - it softens further in the oven, so it won't turn mushy.
