1. Take the kaymak out of the fridge 15 minutes before serving so it softens a little.
2. Warm the lavash breads for a few seconds in a dry frying pan or directly over a gas flame until soft and fragrant.
3. Spoon the kaymak onto a flat plate and spread it with the back of the spoon to a wavy surface.
4. Drizzle generously with the date syrup.
5. Fold the warm lavash into quarters and place alongside.
6. Scoop up the cream and syrup with the bread; serve with tea.
Tip: Geymar is Baghdad's legendary breakfast: the thick, slightly sweet clotted cream made from buffalo milk is sold on the street at dawn and eaten with date syrup (dibis). If you can't find kaymak, a 2:1 mix of mascarpone and thick sour cream gives a very similar experience.
