Chicken fajitas are a striking Mexican dish: spiced chicken strips with crunchy peppers, wrapped in warm tortillas.
1. Cut the chicken breast fillet into thin strips and marinate it with chilli powder, salt and pepper. If there is time, let it stand for 20-30 minutes.
2. Cut the bell pepper and the onion into strips too.
3. Heat the cooking oil good and hot in a pan and sear the chicken strips all over.
4. Add the vegetables and the crushed garlic and fry them quickly over a high heat until crunchy – the pepper should stay a little crisp.
5. Warm the tortillas in a pan or in the oven, fill them with the fajita, and serve rolled up.
Tip: Fry the chicken in a good hot pan so the edges get a nice sear rather than steaming.
