1. Rinse the chicken and pat it dry with kitchen paper.
2. Mix the salt, paprika, caraway seeds and pepper and rub the chicken thoroughly with it inside and out.
3. Put a bunch of parsley and a piece of butter into the cavity, then lay the chicken breast side up in a roasting tin.
4. Place it in a 190 °C oven and roast for about 1 hour 15 minutes.
5. Every 15 minutes, brush it with the melted butter mixed with the beer - this makes the skin deep brown and crispy.
6. Let it rest for a few minutes, cut into quarters and serve with pretzels or potato salad.
Tip: In Bavarian beer gardens the "Hendl" always comes with fresh pretzels - at home a bowl of potato salad is just as good.
