A vivid green, creamy pea soup with smoked ham – the perfect pairing of smoke and sweet peas.
1. In a pot melt the butter, and sweat the finely chopped onion glassy.
2. Add the diced potato and half of the smoked ham.
3. Pour in water, throw in the bay leaf, and cook it for 15 minutes.
4. Add the green peas, and cook them only a further 6-8 minutes – this way they stay vivid green.
5. Take out the bay leaf, then blend the soup smooth with a stick blender.
6. Stir in the cream, then serve it with the remaining diced smoked ham on top.
Tip: Do not overcook the peas – after 8 minutes they start to grey, and the soup loses its nice colour.
