1. Cut the bread into 8 equal thick slices and remove the crusts.
2. Spread one side of four slices thickly with peanut butter and top each with a plain slice, pressing the edges together firmly.
3. Beat the eggs with the milk in a shallow dish until smooth and coat the sandwiches thoroughly on both sides, edges included.
4. Heat about 1 cm of oil in a smaller frying pan and fry the sandwiches over medium heat for 1-2 minutes per side until golden brown.
5. Drain on kitchen paper to remove excess oil.
6. Put on plates, top each with a slice of butter and drizzle generously with condensed milk; serve immediately.
Tip: The iconic, hearty breakfast of Hong Kong's cha chaan teng cafés, usually served with Hong Kong milk tea. Instead of condensed milk you can use golden syrup or honey.
