Gundel pancakes are the crown jewel of Hungarian confectionery: thin pancakes with a rum-and-walnut filling and a silky chocolate sauce.
Pancakes
1. Mix the flour with the eggs, the milk, the sugar and a pinch of salt into a lump-free, thin batter, and after a brief rest cook thin pancakes.
Walnut filling
2. Mix the ground walnuts with the sugar, the raisins and enough warm milk to get a creamy mixture.
3. Finally stir in the rum, which gives the characteristic aroma.
4. Fill the pancakes with the walnut cream, and fold them into quarters or roll them up.
Chocolate sauce
5. Melt the dark chocolate smooth with the boiled cream and the cocoa powder over steam or over a low heat.
6. Serve the filled pancakes generously drenched in the warm chocolate sauce.
Tip: They are originally brought to the table flambéed, set alight – at home the generous warm chocolate sauce is spectacular too.
