1. Stir the tahini well in the jar before using, as the oil separates on top.
2. Spoon the tahini into a small bowl.
3. Pour the pekmez (grape molasses) over it.
4. Stir just a few times with a spoon so it stays marbled; if you mix it completely you'll get a thicker, caramel-like cream.
5. Adjust the ratio to taste: more pekmez is sweeter, more tahini is nuttier.
6. Serve with fresh bread or simit for breakfast or an afternoon snack.
