1. Crumble the shanklish balls roughly with a fork.
2. Deseed the tomatoes and cut into small dice.
3. Chop the red onion very finely.
4. Finely chop the fresh mint.
5. Toss the cheese, tomatoes, onion and mint together on a plate and sprinkle with za'atar.
6. Drizzle generously with olive oil and serve with pita.
Tip: Shanklish is the fermented cheese ball of Syria and northern Lebanon, rolled in za'atar or chilli, with an intense, piquant taste. If you can't find it, feta is a good substitute: crumble it with a little za'atar, chilli flakes and a pinch of sumac.
