1. Chop the onion very finely and mix it with the vinegar, oil, water, caraway seeds, salt and pepper.
2. Cut the Harz cheese (a ripe sour-milk cheese, the classic Handkäse) into thin slices or cubes.
3. Place it in a shallow dish and pour the onion marinade evenly over it.
4. Cover and refrigerate for at least 1 hour, or even overnight, so the marinade soaks in.
5. Take it out of the fridge 15 minutes before serving so it can warm up slightly.
6. Serve with buttered bread and spoon plenty of marinade over the cheese.
Tip: The "Musik" is the onion marinade - the longer the cheese sits in it, the creamier and tastier it gets.
