Hungarian farmer's scramble is a hearty, lecsó-based breakfast – with sausage, peppers and tomato it is a real weekend abundance.
1. Cut the sausage into rounds, and chop the onion, the tomato pepper and the tomato.
2. In the lard, over a medium heat, fry the onion and the sausage, until the sausage releases its fat and starts to brown.
3. Add the pepper and the tomato, and braise them for a few minutes, until they soften.
4. Sprinkle over the paprika, and stir it in quickly.
5. Crack in the eggs, and over a low heat, stirring constantly, cook them soft – it is right when still creamy.
6. Salt and pepper it, and serve with fresh bread.
