1. Mix the salep powder thoroughly with the sugar in a bowl so it won't go lumpy.
2. Warm the milk in a pan until lukewarm.
3. Whisking constantly, gradually sprinkle in the sugared salep.
4. Bring to the boil over medium heat, stirring all the time, then simmer over low heat for 8-10 minutes until creamy and thick like a pudding.
5. Pour into mugs and dust generously with cinnamon.
6. Serve hot on winter afternoons.
Tip: Salep, ground from orchid tubers, is Istanbul's winter street drink. If you can't find it, 2 tablespoons of cornflour and a little vanilla give a similarly thick, silky drink.
