1. Bring the water to the boil.
2. Put the rooibos tea bags into a jug or teapot and pour over the boiling water.
3. Steep for 5-7 minutes; rooibos does not turn bitter with longer steeping, so it can also be made stronger.
4. Remove the tea bags and dissolve the honey in the hot tea.
5. Slice the lemon and put one slice in each cup.
6. Serve hot, or cooled with ice cubes as iced tea.
Tip: Rooibos (red bush) grows only in the Cederberg mountains of South Africa; it is caffeine-free, so it is fine in the evening and for children. In South Africa it is often drunk with milk and sugar like black tea. In summer it is excellent iced, flavoured with a cinnamon stick or orange peel.
