1. Blanch the green beans in salted water for 5 minutes, then plunge them into iced water, so they keep their vivid colour.
2. Cut half of the onion into thin rings, toss them in flour, and fry them crisp in hot oil; lift them onto paper towel.
3. Chop the remaining onion finely, and in the butter fry it with the sliced button mushrooms.
4. Sprinkle over the wheat flour, pour in the cream, and cook it into a thick sauce.
5. Fold in the green beans, salt and pepper it, then smooth it into an ovenproof dish.
6. Bake at 190 °C for 20 minutes, then finally scatter over the crisp onion rings and serve.
