Description

Pork chops with applesauce are a favourite of American home cooking, where the sweet-and-sour applesauce nicely counterpoints the juicy meat.

The pork chops

1. Salt and pepper the pork chops, then rub them with crushed garlic and thyme.

2. In hot oil brown both sides golden brown, then cook them through.

The applesauce and the potatoes

3. Peel the apples, and dice them.

4. With a little water, the sugar and the butter cook them tender, then crush them with a fork.

5. Cook the potatoes in salted water.

6. Serve the chops with the potatoes and the lukewarm applesauce.

Tip: The sweet-and-sour of the applesauce nicely balances the fattiness of the pork.
