1. Bring the water to the boil, add the black tea and star anise, take off the heat and steep for 5 minutes.
2. Strain, then stir in the sugar and condensed milk while still warm until dissolved.
3. Leave to cool to room temperature, then chill in the fridge for at least 1 hour.
4. Fill the glasses to the top with ice cubes.
5. Pour the sweetened tea over the ice so it comes three-quarters of the way up the glass.
6. Slowly pour the cold milk on top to create a pretty marbled layer, and stir before drinking through a straw.
Tip: The bright orange favourite of Thailand's street stalls; the distinctive colour comes from the Thai tea mix sold there, but it is excellent with ordinary strong black tea too. Brew it stronger than usual, as the ice and milk dilute it.
