1. Mash the curd cheese with a fork (it doesn't need to be completely smooth – Poles like it a little crumbly).
2. Stir in the sour cream until creamy and spreadable; if it's too thick, add another spoonful of sour cream.
3. Finely chop the chives, cut half the radishes into very small cubes and the other half into thin rounds.
4. Stir the chives and diced radish into the cheese and season with salt and freshly ground pepper.
5. Slice the rye bread and spread it thickly with the cheese spread.
6. Garnish with the radish slices and serve straight away.
