Breaded fried camembert is a cheese speciality sealed in a crisp coating, molten and warm inside, and is great as both a starter and a main.
1. Chill the camembert cheeses thoroughly, then pat them dry.
2. Toss them in flour, dip them in beaten egg, then roll them in breadcrumbs.
3. Repeat the egg and breadcrumb coating once more – the double coating holds the melting cheese in.
4. Fry them in plenty of moderately hot oil for 2-3 minutes per side until golden.
5. Lift them out with a slotted spoon onto paper towel so the excess oil drips off.
6. Let them rest for a few minutes so the cheese firms up a little.
7. Serve fresh, on their own or with pickles.
Tip: Cheese that is well chilled and tossed in a double coating leaks out less during frying.
