"Beans on toast" is the legendary dish of British student cooking: ready in minutes, surprisingly filling, and needing only a handful of ingredients. A quick lunch or dinner.
1. Drain and rinse the 400 g beans.
2. In a small saucepan warm them with the 3 tablespoons tomato purée, the 1 teaspoon sugar and the 1 teaspoon smoked paprika.
3. Simmer on a low heat for 8-10 minutes until it thickens.
4. Season with a pinch of salt and pepper.
5. Toast the 4 slices of bread and spread them with the 30 g butter.
6. Spoon the beans on top, sprinkle over the 80 g grated cheddar and let it melt in the heat of the beans.
Tip: The smoked paprika brings out that characteristic "baked beans" flavour from the beans.
