1. Boil fresh, cold water – reboiled water makes flat-tasting tea.
2. Warm the mug by rinsing it with hot water.
3. Add the black tea and pour on the water at a rolling boil.
4. Steep for 3-4 minutes – do not squeeze the bag, it releases tannins and turns it bitter.
5. Remove the tea and add a splash of cold milk.
6. Sweeten to taste. Drink hot, straight away.
Tip: The everyday drink of Britain, named after the builders who drink it – strong, milky and sweet. With a teabag the milk always goes in AFTER brewing, or it cools the water too much.
