Túrós csusza is a simple yet great Hungarian pasta dish: the crisp bacon, the crumbled curd cheese and the sour cream together are unbeatable.
1. Cook the wide noodles in plenty of salted water until just tender, then drain them, but set aside a spoonful or two of the cooking water.
2. Cut the bacon into small cubes, and in a pan, over a medium heat, fry it crisp, so it renders plenty of fat.
3. Toss the drained pasta with half of the crumbled curd cheese and the fried bacon, and pour over the cracklings together with their fat.
4. To serve, pile it onto plates, spoon over plenty of sour cream, and sprinkle it with the remaining curd cheese.
Tip: If you find it too dry, a little of the reserved pasta cooking water makes it creamier.
