1. Toast the walnuts in a dry frying pan for 3-4 minutes until fragrant, then chop roughly.
2. Divide the anari (fresh, unsalted Cypriot whey cheese – fresh ricotta can replace it) between 4 bowls or plates in large heaped spoonfuls.
3. If the honey is too thick, warm it in a small pan for 20 seconds so it runs.
4. Drizzle the cheese generously with the honey.
5. Sprinkle with the toasted walnuts and a pinch of cinnamon.
6. Serve at once with fresh fruit (figs, grapes) for breakfast or as a light dessert.
Tip: Cypriots use the best mountain thyme honey for this – anari is a very fresh cheese, so eat it within 2-3 days.
