A filling, simple classic of British "chippy" cooking: crisp chips, fried sausages and baked beans on one plate.
1. Peel the potatoes, cut them into finger-thick chips, and blot them thoroughly dry with kitchen paper – this way they turn really crisp.
2. In hot oil, over a medium-high heat, fry them golden brown and crisp, then take them onto kitchen paper for the excess fat to drain off, and salt them.
3. Fry the sausages in a pan or in the oven, browning them nicely all round.
4. Warm the tinned beans through with the passata, season them with salt and pepper, and simmer them for a few minutes, until they thicken.
5. Plate up the sausages, and beside them the baked beans and the crisp chips, and serve it immediately, hot.
Tip: A quick, filling weeknight supper. Do not crowd the potatoes in the pan – fried in small batches they stay really crisp.
