S'mores are the obligatory sweet of American campfires: crisp biscuit, melted chocolate and toasted marshmallow.
The biscuit
1. Mix the wheat flour with the brown sugar and a pinch of salt, then rub the cold butter into it.
2. With the honey and 1-2 tablespoons of cold water knead it into a dough, and put it in the fridge for 30 minutes.
3. Roll it out thin, cut it into squares, prick it with a fork, and at 180 °C bake it crisp for 10-12 minutes, then cool it.
The filling and assembly
4. On a skewer, over an open flame (grill, campfire), toast the marshmallows golden brown – turning them, so they do not burn.
5. Put a square of dark chocolate on top of one biscuit, and the hot marshmallow on that.
6. Cover it with another biscuit, and gently press it together – the hot marshmallow melts the chocolate.
Tip: It can be made in the oven too: toast the marshmallow under the grill for 1 minute; the name comes from the contraction of "some more".
