1. Cut the bacon into cubes and fry it crisp, then take it out.
2. In the fat left behind, fry the finely chopped onion and the chilli pepper.
3. Pour in the beaten eggs and, over a low heat, stir them into a creamy scramble.
4. Warm the tortillas in a dry pan for half a minute per side so they are pliable.
5. Onto each put scrambled egg, bacon, grated cheddar cheese, diced tomato and avocado, then sprinkle with black pepper.
6. Fold up the bottom, fold in the two sides, and roll it up tightly; serve cut in half.
Tip: Do not overfill it, or it cannot be wrapped; a warm tortilla is crucial – a cold one cracks at the folds.
